This recipe was from the Parke-Davis Cafeteria in Detroit, Michigan in the 1940's. My Grandpa Joe worked there, and loved this recipe so much, he bugged the cafeteria staff until they gave it up. It makes a really moist loaf, or cupcakes. If you decide to frost them, I suggest using a cream-cheese frosting. Yum!

    Ingredients

    • 5 bananas, mashed
    • 1/2 cup walnuts, chopped
    • 1/2 cup butter, softened
    • 1 1/4 cups sugar
    • 2 eggs
    • 1/3 cup sour milk (to sour milk, add 1 tablespoon vinegar to regular milk or cream)
    • 2 1/2 cup flour
    • 1/2 tsp. salt
    • 1/2 tsp. baking powder
    • 1 tsp. baking soda
    • 1/2 tsp. vanilla

    Directions

    1. Preheat oven to 350.
    2. Cream butter with sugar and beat until light.
    3. Add well beaten eggs and mix well.
    4. Add banana pulp and mix well.
    5. Sift and measure flour.
    6. Add soda to sour milk.
    7. Alternate mixing flour and milk into banana mixture.
    8. Add baking powder last, and mix well.
    9. Pour into greased pan or cupcake wrappers.
    10. Bake cupcakes for 25-30 minutes or until a toothpick comes out clean from the center.
    11. Loaves of bread take longer 45-55 minutes.
    12. Goes well with cream-cheese frosting.

This banana cake sounds too good not to try.

Printed the recipe for the next time I have a craving for banana cake.

Don't forget to add it to the Desserts Sweets Treats group ;o)

      Ciao for now,
      Claudia
