  • Un Stuffed Bell Pepper Soup

    Ingredients

    • Basmati brown rice 3/4 c
    • Chopped celery 2 c
    • Crushed oregano leaves 2 ts
    • Diced carrots 3/4 c
    • Diced yellow onions 1 1/2 c
    • Garlic cloves; minced or pre 6
    • Ground celery seed 1/2 ts
    • Mild chili powder 2 1/2 ts
    • Red or green peppers; chop 2 1/2 c
    • Red or green peppers; dice 1 1/2 c
    • Tamari soy sauce 3 tb
    • Tomato paste 12 oz
    • Water 8 c

    Directions

    1. In a 5-6 qt pot bring to boil water, rice
    2. onion, & diced bell pepper. Reduce heat & simmer covered for about 25
    3. min or until rice is a little tender. Add celery, bell pepper
    4. squares, carrot, garlic, oregano, basil, celery seed and tomato
    5. paste. Continue simmering 20-30 min or until added veggies are tender
    6. and rice is completely cooked. Add chili powder, tamari and salt to
    7. taste. Simmer 5 min or until flavors are well blended. Adjust
    8. seasonings to taste. You can also add a few table spoons of powdered
    9. vegetable broth to make a creamier broth.
