  • Ultimate Turkey Meatloaf

    This is a moist light meatloaf. You won't believe it's turkey!

    Ingredients

    • 1 Tbsp. olive oil
    • 1 Tbsp. unsalted butter
    • 1/2 cup red onion, minced
    • 1 Tbsp. garlic, minced
    • 1 tsp. dried thyme
    • 1 tsp. dried oregano
    • 1/2 tsp. ground allspice
    • 3/4 cup heavy cream
    • 1-1/2 pounds ground turkey
    • 1 cup plain fine dry bread crumbs
    • 2 large eggs, lightly beaten
    • 1/4 cup Italian parsley, chopped
    • 3 Tbsp. ketchup
    • 1/2 tsp. salt
    • ground black pepper to taste

    Directions

    1. Preheat oven to 350 degrees.
    2. Heat oil and butter in pan until butter is melted.
    3. Saute onions and garlic until onions are clear, about 3 minutes.
    4. Add spices and cream and bring to a simmer until reduced by a third.
    5. Set aside and cool.
    6. In a large bowl combine ground turkey, bread crumbs, eggs, parsley, ketchup, and salt & pepper.
    7. Add cream mixture to turkey mixture and mix until incorporated.
    8. Put mixture into a greased loaf pan.
    9. Bake 1 hour or until temperature is 165 degrees.
    10. Broil last few minutes to brown top, if needed.
    11. Let cool 10 minutes in pan and serve.
