Ultimate Turkey Meatloaf
This is a moist light meatloaf. You won't believe it's turkey! Ingredients
- 1 Tbsp. olive oil
- 1 Tbsp. unsalted butter
- 1/2 cup red onion, minced
- 1 Tbsp. garlic, minced
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1/2 tsp. ground allspice
- 3/4 cup heavy cream
- 1-1/2 pounds ground turkey
- 1 cup plain fine dry bread crumbs
- 2 large eggs, lightly beaten
- 1/4 cup Italian parsley, chopped
- 3 Tbsp. ketchup
- 1/2 tsp. salt
- ground black pepper to taste
Directions
- Preheat oven to 350 degrees.
- Heat oil and butter in pan until butter is melted.
- Saute onions and garlic until onions are clear, about 3 minutes.
- Add spices and cream and bring to a simmer until reduced by a third.
- Set aside and cool.
- In a large bowl combine ground turkey, bread crumbs, eggs, parsley, ketchup, and salt & pepper.
- Add cream mixture to turkey mixture and mix until incorporated.
- Put mixture into a greased loaf pan.
- Bake 1 hour or until temperature is 165 degrees.
- Broil last few minutes to brown top, if needed.
- Let cool 10 minutes in pan and serve.
