Two Rooms Hummous
A thick spread made from mashed chickpeas in the style of the restaurant Two Rooms. Can be served as an accompaniment with fish or used as a dip. Ingredients
- 1kg chick peas (uncooked)
- 1/2tspn bicarbonate of soda
- 300gms sesame seed paste
- 50gms garlic
- 200ml olive oil
- 5gms cumin powder
- 1gm chili powder
- 30gms salt
- 1L purified water
- 300ml lemon juice
Directions
- ---Boil Chickpeas---
- Soak chickpeas for 24 hours before use
- Cook chickpeas in plenty of water with the soda until very soft
- Drain Water
- ---Mix All Ingredients---
- Combine sesame seed paste, garlic, olive oil, chili powder, salt, purified water, and lemon juice
- Add chickpeas to chickpeas and puree
