Twice Cooked Cauliflower
Pleasing elements of flavor and texture, this side dish is creamy and delicious. It takes cauliflower from conventional to contentment! Some may mistake it for mashed potato casserole and you might even get away with the trickery. Consider this recipe when you need a nice side for special occasions. Ingredients
- 1 head cauliflower, trimmed and cut or separated into sections
- 1 tablespoon butter
- 4 ounces cream cheese
- 4 or 5 ounces sharp cheddar cheese (about 1 1/4 cups), grated and divided
- Salt and pepper to taste (may need none at all)
- 2 ounces bacon, fried crisp and crumbled
Directions
- Heat oven to 350 degrees F. Butter a casserole dish and set aside.
- Steam cauliflower until tender; drain, then mash well with butter, cream cheese and 4 ounces (1 cup) of the cheddar cheese; salt and pepper to taste.
- Spoon into prepared casserole dish, topping with crumbled bacon and remaining cheddar cheese.
- Bake until casserole is well heated and cheese on top melts, about 5-10 minutes.
