One of the oldest dishes in Turkey. This dish is called paplajon even if it doesn't have eggplant in it it is called Patlican. Simple to cook, similar to one of our stews. Chicken or beef can be used. Turkish people cook with tomato paste with just about everything in the area where I live. It is called tomato salsha, made at home or bought in the stores. Amounts of vegetables do not matter, just add as desired.

    Ingredients

    • potatoes
    • onions
    • garlic
    • parsley
    • eggplant peeled or not
    • carrots
    • olive oil
    • tomato, if want
    • tomato paste
    • Fetta Cheese or the like
    • oregano
    • Zucinni (If desired)
    • Yogurt (If desired)
    • Olive Oil

    Directions

    1. Cut up vegetables, add tomato paste and olive oil in a pot, they use a clay pot here. Stir until hot add vegatables and let cook until tender. Can add meat if desire.
    2. Add cheese and yogurt to top.

I tried the authentic dish in Turkey and it is worth a try if you like eggplant.

This looks really good, Alice! Do you have any sense for the quantities of the different ingredients? I'll give it a try anyway, but would be easier if I knew the quantities. Anyway, thanks for sharing!
