  • Turkey Tetrazzini

    Ingredients

    • 6# turkey, cooked
    • 6 oz red pepper, chopped
    • 2 Tbsp parsley, chopped
    • 2-1/2# egg noodles, fine
    • 2 1/2 gal water, boiling
    • 1 oz salt
    • 2 Tbsp cooking oil (optional)
    • 8 oz margarine or butter
    • 8 oz onion, finely chopped
    • 2-1/2# mushrooms, sliced
    • 6 oz flour, all purpose
    • 1 oz salt
    • 1 tsp pepper, white
    • 1 qt milk
    • 1 qt chicken stock
    • 1# cheddar cheese, shredded

    Directions

    1. Dice turkey. Add red pepper and parsley.
    2. Cook noodles in boiling, salted water. Add oil if desired. Drain well.
    3. Saute onions and mushrooms in margarine.
    4. Blend flour, salt, and white pepper into sauteed vegetables. Add milk and chicken stock.
    5. Combine cooked noodles, turkey, and sauce; scale into greased pans, 12# per pan.
    6. Sprinkle 8 oz cheese over top of each pan. Bake at 350 degrees for 35-40 minutes or until heated through and cheese is bubbly.
