Turkey and Sweet Potato Hash
A very good breakfast dish, and very healthy...now that's an oxymoron, good and healthy!! Ingredients
- 1 cup sweet potatoes, diced
- 1 cup turkey, cooked and diced or pulled
- 1/2 cup onion, diced
- 1/2 cup Anaheim chile, diced
- 2 tbsp vegetable oil
- 1 tsp cinnamon
- 2 tbsp brown sugar
- cracked pepper
- sea salt
Directions
- In a large skillet heat oil to smoke point and add sweet potatoes.
- Cook for 3-4 minutes, add onion and chillies. Cook 5 minutes more.
- Add turkey, cinnamon, and sugar; season with cracked pepper and sea salt to taste.
- Serve with eggs.
- Note: Sweet potatoes should have a little texture, not completely mushy.
