Tuna Cakes
My mom gave me this recipe, with five kids in the house she came up with quite a few easy recipes. This one I have tweaked to give it flavor. I use a few more eggs than mom and while mom still uses yellow mustard, I decided to add spicy brown mustard. I use 6 cans and 8 eggs because growing boys have to eat. Ingredients
- 4 cans of tuna in water
- 1 package saltine crackers crushed almost into a powder
- 4 eggs
- 2 Tbsp Yellow mustard or spicy brown mustard
Directions
- Wash your hands.
- Open tuna cans
- drain water/oil
- place tuna in large bowl
- add eggs mix well
- add bread crumbs and mustard
- mix with your hands
- make them into patties
- preheat skillet to medium heat but not too hot
- place patties in skillet
- brown on both sides until medium golden brown
- Kids love this meal. I serve Ranch Style beans and macaroni or french fries with this.
