Traditional Native Macapuno Sweets

- 1 cup sugar
- 2 cups water
- 4 cups grated young coconut or sport coconut flesh (also known as macapuno)
- 1 tbsp butter
- 1 tsp vanilla essence
Directions
- Combine the sugar and water in a saucepan and bring to the boil.
- Simmer and cook until the liquid clears.
- Add the coconut flesh and simmer until the mixture thickens, about 5 minutes.
- Stir in butter and vanilla essence.
- Heat through until the butter dissolves completely.
- Remove from the heat and set aside to cool before serving.
