Ingredients
- 32 pounds Iceberg lettuce,
- 8 pounds carrots, sliced
- 8 pounds Celery, sliced
- 2 pounds Red Onions, chopped
- 16 pounds tomatoes, sliced thinly
- 3 gal salad dressing (asst)
Directions
- Tear prepared lettuce into large pieces.
- Combine lettuce with carrots, celery, and onions; toss lightly.
- Cover. Add tomatoes to other salad vegetables just before serving.
- Toss lightly.
- CCP: Hold for service at 41 F. or lower
