Tomatillo Chicken Chili

- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 (16 ounce) can chicken broth
- 1 pound tomatillos, boiled and chopped
- 1 (16 ounce) can diced tomatoes
- 2 pasilla chilies, roasted, peeled and chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 2 ears fresh corn, rosted and stripped from the cobb
- 1 pound diced, cooked chicken meat (dark meat is best)
- 1 (16 ounce) can white beans
- salt and pepper to taste
Directions
- Heat oil
- Add onion and garlic saute until translucent
- Stir in broth, tomatillos, tomatoes, chilies, and spices.
- Bring to a boil, simmer for 10 minutes.
- Add corn, chicken, and beans; simmer on low 10 minutes.
- Season with salt and pepper to taste.
- Add cheese or sour cream as you wish
