    Yummy and easy. You can substitute fresh corn and tomitillos for 16 oz cans of same.

    Ingredients

    • 2 tablespoons vegetable oil
    • 2 cloves garlic, minced
    • 1 onion, chopped
    • 1 (16 ounce) can chicken broth
    • 1 pound tomatillos, boiled and chopped
    • 1 (16 ounce) can diced tomatoes
    • 2 pasilla chilies, roasted, peeled and chopped
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon ground cumin
    • 2 ears fresh corn, rosted and stripped from the cobb
    • 1 pound diced, cooked chicken meat (dark meat is best)
    • 1 (16 ounce) can white beans
    • salt and pepper to taste

    Directions

    1. Heat oil
    2. Add onion and garlic saute until translucent
    3. Stir in broth, tomatillos, tomatoes, chilies, and spices.
    4. Bring to a boil, simmer for 10 minutes.
    5. Add corn, chicken, and beans; simmer on low 10 minutes.
    6. Season with salt and pepper to taste.
    7. Add cheese or sour cream as you wish
