  • Toasted Almond Chicken with Amaretto and Porcini Mushrooms

    THIS IS A VERY SIMPLE CHICKEN DISH,THAT ANYONE CAN MAKE AND AT THE SAME TIME VERY ELEGANT AND DELICIOUS.SERVE WITH WHITE RICE AND YOUR FAVORITE WHITE WINE ,PERHAPS SOMETHING A LITTLE FRUITY..

    Ingredients

    • 1/4cup all purpose flour
    • 6 large chicken breasts skinned and boneless
    • 2 garlic cloves crushed
    • 12 ounces porcini mushrooms thinly sliced
    • 9 ounces pearl onions peeled and blanched
    • 1/4 cup amaretto
    • 1 cup chicken stockcooked to reduce by half
    • 1/2 cup heavy cream
    • 1cup toasted slivered almonds
    • 1/3 cup chopped parsley
    • Butter
    • Oil

    Directions

    1. Preheat oven to warm.Lightly coat the chicken with flour.
    2. In a large skillet heat butter and oil ,
    3. Add the chicken and cook till lightly browned and slightly cooked through
    4. turn over and brown the other side.
    5. Remove chicken from the skillet and keep warm in the oven.
    6. In the same skillet add the garlic and mushrooms and saute lightly.
    7. Add the onions saute lightly.
    8. remove the onions,garlic and the mushrooms.
    9. Deglaze the pan with amaretto and reduce it to half.
    10. Stir in 6 tbls chicken stock and the cream add in onions,garlic,and mushrooms
    11. Remove the chicken from the oven and arrange on plates
    12. drape with sauce and and sprinkle with almonds and parsley
    13. Serve with rice add nice fresh green peas and your favorite wine .
