Tilapia with Wine and Tomatoes
This is a super quick, super easy recipe that is sure to please. Ingredients
- 4 (4 oz) Tilapia fillets
- salt and pepper to taste
- 4 Tbsp. butter
- 3 cloves garlic, pressed
- 4 basil leaves, chopped
- 1 cup white wine
- 1 (15 oz) can DelMonte diced tomatoes ("flavor" optional)
Directions
- Preheat grill for medium-high heat or preheat oven to 350 degrees F.
- Place fillets on a large pice of aluminum foil (ends and sides crimped up) if grilling or in ungreased glass pan if baking.
- Season each fillet with salt and peper. Place one tablespoon butter on top of each fillet and sprinkle with garlic and basil.
- Pour wine and can of tomatoes over fillets.
- If grilling, fold foil up around fish and seal into a packet or use second piece of foil to cover, sealing in ends and sides. Transport to grill on a cookie sheet.
- Place foil packet on preheated grill or place pan in oven and cook for 15 minutes or until fish flakes easily.
