The Kennedy's Black Eyed Peas
Ingredients
- 1 lb dry Black Eyed Peas picked over soaked overnight in 6 c. water
- 1/2 lb smoked Ham Hocks
- 1 c. Ham minced
- 1 x Onion sliced
- 1 whl Banana Pepper
- 1 tsp Salt
Directions
- Place the peas and water in a pot over moderate heat and add in the ham hocks, onion, warm pepper and salt. Bring to a boil, reduce heat to low and simmer for 1 to 1 1/2 hrs, or possibly till the peas and meat are tender. Remove the warm pepper. Remove skin and bones from the hocks and cut the meat into small pcs. Return the meat to the pot, add in ham and heat for about 5 min.
