  • The General Wayne Inn's Stewed Tomatoes With Okra

    Ingredients

    • 1 can (14 1/2-oz) whole tomatoes in juice
    • 1 1/2 Tbsp. Cornstarch
    • 1 can (7 1/2-oz) diced okra
    • 1/4 c. Sugar
    • 1 dsh Salt
    • 6 slc White bread, cubed

    Directions

    1. Place tomatoes with their juice in a saucepan. Remove 1/4 c. of juice and blend with cornstarch in a small saucepan; set aside. Drain okra (throw away juice) and wash under cool water; let drain. Bring tomatoes with their remaining juice to a boil and add in cornstarch mix, stirring to incorporate. Reduce heat to medium-low and blend in sugar. Add in salt, okra and bread cubes. Pour into a greased 1 1/2- to 2-qt baking dish and bake at 400 degrees for20 min.
    2. Yield: 4 servings
