the best white chicken chili
Ingredients
- 2.5 cups water
- 1 tsp lemon pepper seasoning
- 1 tbsp olive oil
- 4 boneless skinless chicken breast
- 1 clove garlic, finely chopped
- 1 cup chopped onion
- 2 tsp ground cumin, seperated
- 2 tbsp lime juice
- 28 oz canned great northern beans, undrained
Directions
- in 5 qt stockpot, combine water with lemon pepper, 1 tsp cumin and olive oil
- bring to boil
- add chicken breasts and return to a low boil, then reduce heat to low and simmer 20-30 min or until chicken is fork tender and juice is clear
- remove chicken and cut or shred and return to broth
- add garlic, onion, 1tsp cumin, lime juice and beans to broth
- bring to boil
- summer until thoroughly heated, about 45 min
