THe Beet Chocolate muffins Around

- 1 1/2 Cups Whole Wheat flour
- 1 1/2 Cups white Flour
- 1 Tbsp Baking powder
- 1 1/2 tsp baking soda
- 3/4 tsp Salt
- 3 oz melted Dark Chocolate
- 1/2 Cup Margarine or shortening
- 1 Cup chocolate Chips
- 1 1/4 cup Brown Sugar-Packed
- 3 Eggs
- 1 1/2 Cups Pureed Beets
- 1 Cup Yogurt
- 1 1/2 Vanilla extract
- 1/2 Cup Nuts of choice-opitonal
- 1/4 Cup whole flax or ground flax-opitional
Directions
- Grease your muffin tins.
- Preheat oven to 375
- Melt butter with cocoa. Add to mixing bowl. add remaining ingredients. Mix well.
- Place in tins. Bake 12 to 15 minutes. Do not overbake
- When I make this I don't actually add any margarine, and I use Low fat Strawberry Yogurt instead of plain.
