    A super Moist, Healthy Muffin that has Whole Wheat Goodness, Flax and the Main Thing. Beets! For all those Mom's out there. This is a great way to get your Kids to eat a bit healthier and they don't even know it.

    Ingredients

    • 1 1/2 Cups Whole Wheat flour
    • 1 1/2 Cups white Flour
    • 1 Tbsp Baking powder
    • 1 1/2 tsp baking soda
    • 3/4 tsp Salt
    • 3 oz melted Dark Chocolate
    • 1/2 Cup Margarine or shortening
    • 1 Cup chocolate Chips
    • 1 1/4 cup Brown Sugar-Packed
    • 3 Eggs
    • 1 1/2 Cups Pureed Beets
    • 1 Cup Yogurt
    • 1 1/2 Vanilla extract
    • 1/2 Cup Nuts of choice-opitonal
    • 1/4 Cup whole flax or ground flax-opitional

    Directions

    1. Grease your muffin tins.
    2. Preheat oven to 375
    3. Melt butter with cocoa. Add to mixing bowl. add remaining ingredients. Mix well.
    4. Place in tins. Bake 12 to 15 minutes. Do not overbake
    5. When I make this I don't actually add any margarine, and I use Low fat Strawberry Yogurt instead of plain.
