    Ingredients

    • 1/3 cup light coconut milk
    • 1/3 cup low sodium tomato juice or V8
    • 1/4 cup natural peanut butter
    • 2 tbsp low sodium soy sauce
    • 3 tbsp fresh lime or lemon juice
    • 1 tbsp raw honey
    • 1/4 tsp crushed red pepper
    • 1 lb raw shrimp, peeled & deveined
    • 8 oz rice noodles or whole wheat thin spaghetti
    • 2 cups thinly sliced cabbage
    • 1 chopped green onion3 tbsp crushed peanuts

    Directions

    1. Cook pasta or noodles.
    2. Boil shrimp 2-3 min. (I just add to the cooking pasta/noodles the last couple minutes)
    3. Drain
    4. Over low heat in pot mix together coconut milk, tomato juice peanut butter, soy sauce, lime/lemon juice, honey and red pepper flakes.
    5. Return pasta & shrimp to sauce, toss to coat. Add cabbage and heat til warm, about 2 minutes.
    6. Serve, topped with green onion and crushed peanuts.
