Thai Shrimp & Noodles with Peanut Sauce

- 1/3 cup light coconut milk
- 1/3 cup low sodium tomato juice or V8
- 1/4 cup natural peanut butter
- 2 tbsp low sodium soy sauce
- 3 tbsp fresh lime or lemon juice
- 1 tbsp raw honey
- 1/4 tsp crushed red pepper
- 1 lb raw shrimp, peeled & deveined
- 8 oz rice noodles or whole wheat thin spaghetti
- 2 cups thinly sliced cabbage
- 1 chopped green onion3 tbsp crushed peanuts
Directions
- Cook pasta or noodles.
- Boil shrimp 2-3 min. (I just add to the cooking pasta/noodles the last couple minutes)
- Drain
- Over low heat in pot mix together coconut milk, tomato juice peanut butter, soy sauce, lime/lemon juice, honey and red pepper flakes.
- Return pasta & shrimp to sauce, toss to coat. Add cabbage and heat til warm, about 2 minutes.
- Serve, topped with green onion and crushed peanuts.
