Tennessee Peach Pudding
Ingredients
- 1 cup flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon, optional
- 1/2 cup milk
- 3 cups peeled, pitted and sliced fresh peaches, 4 large.
- Topping:
- 1 cup water
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 TBSP butter
- 1/4 tsp ground nutmeg
Directions
- Preheat oven to 400 degrees
- In a bowl, combine flour, sugar, baking powder, salt and cinnamon, if desired.
- Stir in milk just until combined.
- Add peaches.
- Spread into a greased 8 x 8 inch square baking dish on a baking sheet to catch any spills.
- Topping:
- In a large saucepan, combine water, sugars, butter and nutmeg.
- Bring to a boil until sugars are dissolved.
- Pour over peach mixture
- Bake 40-50 minutes until filling is bubbly and a toothpick inserted in topping comes out clean.
- Serve warm.
