Teala's Black Bean Dip
Ingredients
- 1 c. Dry black beans
- Water
- 1/8 tsp Grnd cumin
- 1/8 tsp Coriander seed
- 1/8 tsp Grnd raosted Mexican oregano
- 1 x Garlic clove, chopped
- 1/2 c. Diced tomato
- 1/4 c. Diced onion
- 1/2 tsp Minced jalapeno
- 1 Tbsp. Minced cilantro leaves
- 2 tsp Fresh lemon juice
- 1/2 tsp Salt
Directions
- Wash beans till clean; soak in hot water 6 hrs, drain, cover with fresh water & cook till soft. When done, mash beans coarsley and continue cooking over medium heat. Add in 1/2 c. water, cumin, coriander, oregano & garlic; cook 5 more min. Stir in tomato, onion, jalapeno, cilantro, lemon juice & salt. Serve as a dip with chips.
