    This is a dish served by Coral Reef in Glendale, California. I moved from the area and no one else made such a dish. I tired to duplicate, made a few changes and I was happy. After a friend took me to their restaruant, and I ordered it, I orded nothing else, and took friends for their dish, and they ordered nothing else either.

    Ingredients

    • 6 Tangerines or Valencia oranges if Tangerines ae out of season
    • 1 32 oz jar Black Cherry Juice
    • Zest of One Tangerine to add depth of flavor
    • 1/2 Cup Sugar
    • 6 jalapenos
    • 6 Dried Red Chilli Peppers
    • 4 TLB Corn Starch
    • 2 Lbs. Cut up Beef
    • Enough Flour to coat beef.

    Directions

    1. Zest Citrus
    2. Slice Jalapenos. Half to fry with beef (becareful of heat getting into eyes) and half with membrane and seeds removed to add to liquid to give aromatic depth
    3. Squeeze juice from Citrus
    4. Mix into Black Cherry Juice and Sugar while heating on stovetop. Prepare Corn Starch using some cool withheld Juice (not water)
    5. Add to liquid.
    6. Add Zest and Jalapenos and Dried Red Chillis.
    7. Cut Beef into small chunks about 1/2" wide and 1" long. Mix into flour and deep fry until crisp.
    8. Mix with liquid and serve with rice if desired.
