  • Tandoori Turkey Kabobs

    Ingredients

    • 1 tsp Grnd cumin
    • 1/2 tsp Salt
    • 1/4 tsp Cayenne pepper
    • 1/4 tsp Grnd cinnamon
    • 1/4 tsp Grnd cloves
    •     Raita
    • 2 sm Cloves garlic, chopped
    • 1 sm Jalapeno pepper, seeded and chopped, optional
    • 1 Tbsp. Chopped or possibly grated fresh ginger
    • 1 x Turkey breast tenderloin (1-1 1/4 lb.), 3/4" cubes
    • 2 Tbsp. Vegetable oil
    • 4 x Pita breads halved, optional
    • 1 c. Plain low fat yogurt
    • 3/4 c. Finely diced, seeded peeled cucumber
    • 1 1/2 Tbsp. Chopped fresh mint
    • 2 tsp Honey (up to 3)

    Directions

    1. Combine cumin, salt, cayenne pepper, cinnamon and cloves in smal bowl; reserve 1/2 tespoon cumin mix for Raita. Prepare Raita. Add in garlic, jalapeno pepper and ginger to remaining cumin mix in bowl. Place turkey in large bowl; drizzle with oil and toss to coat. Sprinkle cumin mix over turkey; toss to coat. Thread turkey onto metal or possibly wooden skewers.
    2. (Soak wooden skewers in warm water 30 min to prevent burning.) Lightly oil warm grid to prevent sticking. Grill turkey on covered grill over medium-warm heat 7-12 min or possibly till turkey is no longer pink, turning once. Serve in pita breads, if you like, with Raita.
    3. Raita: Combine all ingredients plus reserved 1/2 tsp. cumin mix from Tandoori Turkey Kabobs in small bowl. Cover and chill till ready to serve.
