    Ingredients

    • 8 Asparagus (white or green)
    • 2 medium onions
    • 2 Tbs. olive oil
    • 1 Tb. butter
    • Salt
    • Parsley
    • 200g of tagliatelle (egg noodles)

    Directions

    1. Clean asparagus, cut into slices.
    2. Peel the onion and chop it finely.
    3. Heat some oil and butter in a skillet. Add the chopped onion and sauté until soft and translucent.
    4. Then add the asparagus and continue cooking until the asparagus are tender.
    5. Meanwhile, cook the tagliatelle in well salted water.
    6. Then the pasta is al dente, add it to the skillet along with some chopped parsley. Sauté gently for a minute or two to allow the flavors to meld, then serve immediately.

Ya know Frank, sometimes we forget just how fabulous the simplest ingredients can be. I think I'm gonna whip up some pasta dough, cut some noodles and make this tomorrow! Inspiring and makes me think of SPRING!
