sweetcorn fritters with Chorizo

- 3 cups of canned sweetcorn
- ½ cup fresh chopped chives or spring onion
- 6 tablespoons cake flour
- 1 teaspoon baking powder
- 2 eggs
- 1 pinch of Moroccan spice or paprika
- Oil for frying
- For the sauce
- 1 round of chorizo sausage
- 2 cups of Greek yoghurt
- 1 handful of fresh mint chopped
- ½ English cucumber, peeled and diced
Directions
- In a mixing bowl stir together the baking powder, flour, baking powder, Moroccan spice and a pinch of salt.
- Beat the eggs lightly and add to the mixing bowl with the sweetcorn and chives or spring onion and mix.
- Heat oil in a deep pan and fry spoonfuls of the corn mixture until nice browned on both sides.
- Remove from oil and place them on paper towels to drain excess oil.
- Slice the chorizo sausage into rounds and fry until crispy.
- Mix together the diced cucumber, chopped mint and yoghurt and season with salt and pepper.
- Place on four plates and top with the fritters.
- Sprinkle with chorizo rounds and add a good portion yoghurt and cucumber mix to the fritters.
