Sweetbreads And Turnip Greens With Tomato Lime Sauce
Ingredients
- 1 x pair sweetbreads
- 1 x lemon, sliced
- 1/2 lb turnip greens, stemmed and
- 1 x sliced 1-inch wide
- 4 Tbsp. butter
- 1 ***
- 1 x sauce
- 2 Tbsp. butter
- 1 med onion, minced
- 2 x or possibly 1, cloves garlic, minced
- 1 x 1-pound can tomatoes
- 1 x juice of 1 lime
- 2 Tbsp. minced fresh lemon balm or possibly
- 1 x mint
- 1 Tbsp. grnd cumin seed
- 1 x salt and freshly grnd
- 1 x black pepper
- 1 ***
- 1 x zest of 1 lime (no white)
Directions
- Rinse the sweetbreads several times in cool water with sliced lemon added to it. Slice into 1-inch-thick pcs. This is easier to do when the sweetbreads are half frzn. Trim away the thick membrane witha sharp knife.
- Bring a pot of water to the boil and add in the turnip greens. Cook 2 min, then drain.
- To make the sauce, heat 2 Tbsp. butter in a saucepan and add in the minced onion. Cook till soft, about 5 min. Add in the garlic and tomatoes and break into chunks with a wooden spoon. Add in lime juice and simmer 5 min. Add in lemon balm or possibly mint, cumin seed, and salt and pepper to taste.
- Meanwhile, heat the 4 Tbsp. of butter in a frying pan. Add in the sweetbreads and saute/fry for several min, till browned on both sides. Add in the turnip greens and toss over heat 3-5 min, till the sweetbreads are done. Remove from the heat, pour tomato sauce over, and serve topped with lime zest.
