  • Sweetbreads And Turnip Greens With Tomato Lime Sauce

    Ingredients

    • 1 x pair sweetbreads
    • 1 x lemon, sliced
    • 1/2 lb turnip greens, stemmed and
    • 1 x sliced 1-inch wide
    • 4 Tbsp. butter
    •     1 ***
    • 1 x sauce
    • 2 Tbsp. butter
    • 1 med onion, minced
    • 2 x or possibly 1, cloves garlic, minced
    • 1 x 1-pound can tomatoes
    • 1 x juice of 1 lime
    • 2 Tbsp. minced fresh lemon balm or possibly
    • 1 x mint
    • 1 Tbsp. grnd cumin seed
    • 1 x salt and freshly grnd
    • 1 x black pepper
    •     1 ***
    • 1 x zest of 1 lime (no white)

    Directions

    1. Rinse the sweetbreads several times in cool water with sliced lemon added to it. Slice into 1-inch-thick pcs. This is easier to do when the sweetbreads are half frzn. Trim away the thick membrane witha sharp knife.
    2. Bring a pot of water to the boil and add in the turnip greens. Cook 2 min, then drain.
    3. To make the sauce, heat 2 Tbsp. butter in a saucepan and add in the minced onion. Cook till soft, about 5 min. Add in the garlic and tomatoes and break into chunks with a wooden spoon. Add in lime juice and simmer 5 min. Add in lemon balm or possibly mint, cumin seed, and salt and pepper to taste.
    4. Meanwhile, heat the 4 Tbsp. of butter in a frying pan. Add in the sweetbreads and saute/fry for several min, till browned on both sides. Add in the turnip greens and toss over heat 3-5 min, till the sweetbreads are done. Remove from the heat, pour tomato sauce over, and serve topped with lime zest.
