It is typically made with ground beef, tomatoes, raisins for sweetness, olives for salt, and vinegar for a pungent flavor. Here is How to Make Chicken Picadillo

Cook the vegetables in a skillet until they begin to soften
Add the ground chicken and cook until it is almost cooked through
Stir in the adobo sauce, vinegar and spices
Add the tomatoes, olives and raisins
Simmer for 20 minutes
Sprinkle with cilantro and serve

Variations
Use ground beef or turkey in place of ground chicken
Add a quarter pound of Mexican Chorizo to the ground chicken while browning it
Add one cup of diced potatoes at the end of the meat browning
Stir in ½ cup capers with the olives and raisins
For a spicy version add one diced jalapeno pepper

How to Store and Freeze Chicken Picadllo
Chicken Picadillo is one of those foods that tastes better the next day. It will keep in your refrigerator for three to four days. After that, I recommend freezing it. Place the Picadillo in a freezer container and store in the freezer. Allow it to thaw in your refrigerator overnight and re-heat on top of the stove.

1 pound ground chicken breast
bell pepper, diced
2 cloves garlic, chopped
1 small onion, diced
1 tablespoon adobo sauce
2 tablespoons apple cider vinegar
1/4 cup raisins
1/4 cup sliced green olives
1/4 teaspoon coriander
1/4 teaspoon ground cumin
2 teaspoons oregano
1 1/2 cups low sodium or fresh diced tomatoes
1/2 cup chopped fresh cilantro Instructions Add the pepper, onions, and garlic to pan and cook for a few minutes until the begin to soften
Cook the chicken with the peppers, onions and garlic until they are cooked through
Stir in the adobo sauce, vinegar, cumin, coriander, oregano and mix well
Add the tomatoes, olives and raisins and reduce the heat and simmer on low for approximately 15 minutes
