  • Sweet Potato "Souffle"

    Ingredients

    • 3 cups cooked sweet potatoes, peeled
    • 3 eggs
    • 1 stick melted butter or margarine
    • 1/2 cup whole milk
    • 1/4 cup light brown sugar
    • 1/2 cup granulated sugar
    • 1/4 tsp cinnamon
    • 1 tsp vanilla extract
    • pinch of nutmeg
    • Topping:
    • 1 cup cornflakes
    • 1/2 cup light brown sugar
    • 1/3 cup melted butter
    • 3/4 cup chopped pecans

    Directions

    1. Preheat the oven to 350 degrees F.
    2. In a large bowl, mash the sweet potatoes with a whisk or potato masher.
    3. Combine them with the eggs, butter, milk, brown and white sugars, cinnamon, vanilla, and nutmeg.
    4. Prepare topping: Crush cornflakes into small pieces. In a mixing bowl, combine them with sugar, butter, and pecans, and mix well. Top the souffle with this mixture before baking.
    5. Transfer to a 9 by 12-inch casserole dish. Top with pecan topping and bake for 25 to 30 minutes.
