Very secret recipe that my neighbor gave me and I've given to everyone I know. Oops!
- 4 cups sweet potato, cooked, cooled, mashed
- 1/2 cup white sugar
- 2 tablespoons vanilla
- 4 eggs beaten
- 1/2 pint heavy whipping cream
- 2 tablespoons brandy
- 1/4 pound butter
- 1 cup brown sugar
- 1/2 cup flour
- 1 1/4 cup chopped pecans
- Combine all ingredients in a bowl. Mash by hand.
- Pour into a two quart dish sprayed with Pam. Combine final four ingredients in another bowl. Sprinkle/spread topping over the top of the dish adding whole pecans for decor and texture. Cook 35 to 40 minutes at 350 degrees, covered with tinfoil until the last 15 minutes.
