  • Sweet and Sour Pork

    Ingredients

    • 25# 1-inch cubes lean pork
    • 1 1/2 cups soy sauce
    • 1# shortening
    • 2 qts chicken stock
    • 14 oz brown sugar
    • 4 oz cornstarch
    • 2 tsp salt
    • 2 cups pineapple juice
    • 3 cups vinegar
    • 1 cup soy sauce
    • 1 1/2# green peppers
    • 2# onions, cut into eighths
    • 4# tomatoes, fresh, cut in wedges
    • 4 cans pineapple chunks, drained, #10 cans

    Directions

    1. Pour first listing soy sauce over meat; mix lightly. Let stand 1 hour.
    2. Drain soy sauce and save. Brown meat in hot shortening and drain excess fat.
    3. Add stock and drained soy sauce to meat. Simmer until meat is tender, approximately 1 hour.
    4. Combine sugar, cornstarch, and salt. Add pineapple juice, vinegar, and soy sauce; mix until smooth. Add to meat mixture while stirring and cook slowly until thickened.
    5. Fifteen minutes before serving, add green peppers and onions. Cook gently.
    6. Just before serving, add tomato wedges and pineapple chunks. Reheat to serving temperature.
