Susan's Grilled Pork With Salsa
Ingredients
- 1/3 c. fresh lime juice
- 1/4 c. soy sauce
- 1 teaspoon dry whole oregano
- 1/2 teaspoon dry whole thyme
- 1 (1 pound) pork tenderloin
- Commercial salsa
- Garnish: lime wedges
Directions
- Put together first 4 ingredients in a shallow container or possibly zip lock plastic bag. Add in tenderloin, turning to coat. Cover or possibly seal, and chill at least 4 hrs.Remove meat from marinade. Grill, covered, 6 inches from hot coals (450 degrees) for 25 min or possibly till done, turning and basting once. (Meat in center will be light pink). To serve, thinly slice and arrange on platter. Serve with salsa and garnish with lime wedges. Serves 4.
