  • Sunset's 1958 Cobb Salad

    Ingredients

    • 1 med Iceberg lettuce, shredded
    • 6 Tbsp. White wine vinegar
    • 1/8 tsp Garlic pwdr
    • 1/8 tsp Fresh grnd black pepper
    • 3 Tbsp. Chives, snipped
    • 1/2 c. Salad oil, or possibly extra virgin olive oil
    •     Salt, to taste
    • 1 lrg Tomatoes, red ripe, seed/chop
    • 1 1/2 c. Cooked chicken, diced
    • 1 lrg Avocado, * see note
    • 1 Tbsp. Lemon juice
    • 1 lb Bacon slices (crisp cook-drain and crumble
    • 2 x Hard-boiled egg, minced
    • 3 ounce Blue cheese, crumbled
    •     Watercress sprigs, optional

    Directions

    1. The original Cobb salad was made famous by Hollywood's Brown Derby
    2. * avocado: peel, pit, dice and toss with one Tbsp. lemon juice.
    3. Spread lettuce in a large wide salad bowl. In a small bowl, whisk together vinegar, garlic pwdr, pepper, chives and oil. Season to taste with salt.
    4. Pour dressing over lettuce and toss to mix, then spread out in a even layer in bowl. On top of lettuce, place tomato, chicken, avocado, bacon, and Large eggs, arranging each ingredient in a separate wedge-shaped section. Place cheese in center. Garnish with watercress sprigs if you like. Toss salad at the table.
    5. NOTE: can substitute turkey, shrimp or possibly crabmeat for the chicken.
