    A treat for those on a super healthy lifestyle diet, sunflower seeds are combined with coconut oil to create a guilt free candy suitable for any occasion.Great for those with diabetes and peanut allergies, too, or anyone just trying to shed a few pounds and looking for a great sugary snack substitute.Kids love them, and so do I !

    Ingredients

    • 1 cup raw sunflower seeds
    • 1 cup lightly toasted sunflower seeds
    • 1 cup unsweetened fine coconut shreds
    • 1 1/2 cups almond flour
    • 1 /2 cup coconut oil
    • 1/8 teaspoon sea salt
    • 1/2 teaspoon green stevia powder
    • 2 teaspoons honey, optional
    • 1 1/2 ounce 100% Bakers Chocolate, coarsely chopped
    • 6 small, pitted dates, chopped
    • Coatings: 3 ounces 100% Bakers chocolate melted with
    • 2 teaspoons coconut oil and
    • 1/8 teaspoon green stevia powder
    • Or 1/4 cup finely ground walnuts
    • Or 1/4 unsweetened fine coconut shreds

    Directions

    1. Blend all ingredients except coatings together in a Vita-Mix or other suitable blender until seeds are mostly smooth with a few small pieces left for texture.
    2. Roll the dough in 3/4 " balls and place on a parchment paper lined baking sheet
    3. Dip the balls in your choice of coatings. I like to do all three for a great presentation.
    4. Chill to firm chocolate coating, if used.
    5. The chocolate coated ones do best kept in the fridge as it melts easily. Store in a lovely parchment lined tin. Does not require refrigeration.
