    Ingredients

    • Excellent Cookies
    • 2 cups all-purpose flour
    • 2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon allspice
    • 1/2 teaspoon cardamom
    • 3/4 teaspoon ground cloves
    • 3/4 (1/2 and 1/4) teaspoon ground ginger
    • 3/4 cup (6 ounces) (12 Tablespoons) butter flavored shortening
    • 1 cup white (granulated) sugar
    • 1 large egg
    • 1/4 cup (unsulphured) molasses
    • 2 Tablespoons milk (1%, 2%, or whole, NOT skimmed)
    • 1 flatware teaspoon, for scooping

    Directions

    2. Preheat oven to 350 F.
    3. Line cookie sheets with parchment paper. Set aside.
    4. In a medium bowl, mix together flour, baking soda, salt, cinnamon, cardamom, cloves and ginger. Set flour mixture aside.
    5. In a large bowl, at medium-high speed, beat shortening, sugar until smooth. (2 minutes)
    6. Add in 2 Tablespoons of milk.
    7. Scrape down sides of bowl.
    8. Beat in the egg and then the molasses until well blended.
    9. At low speed, gradually add in the flour mixture until just blended.
    10. (Do Not Over Mix)
    11. (If dough is too wet to roll, mix in 1 to 2 Tablespoons of flour)
    12. Using a flatware teaspoon, scoop and roll dough into 1 inch balls (.45 ounce)
    13. Place balls on cookie sheets about 2 inches apart.
    14. Slightly press down on top of ball.
    15. Bake for 6-1/2 minutes.
    16. For even browning, rotate the cookie sheet half way through baking cycle.
    17. Remove cookies from oven and cool, on cookie sheets for 2 minutes.
    18. Move cookies, on parchment paper, to wire racks for complete cooling.
    19. If desired, after baking and cooling, sprinkle with confectioners’ sugar.
    20. Makes 5 dozen (60) 2-1/2 inch cookies.
