  • Stuffed Bell Peppers

    Fresh green Bell peppers, filled with rice, onions, and tomatoes…garnished with sliced mushrooms, and mildly spiced, make this a delicious side dish.

    Ingredients

    • 6 –8 green bell peppers
    • 1 ½ cups cooked rice (white or brown)
    • ½ tsp italian spice
    • salt & pepper to taste
    • ¼ Vidalia or spanish onion, finely chopped
    • 3 to 4 fresh tomatoes
    • butter to preference

    Directions

    1. Cut the tops off the bell peppers, and remove the seeds and white sections
    2. (Since these tops will not be used, freeze and save for a pot of soup or stew later on!)
    3. Prepare the rice by adding the onion, tomato, Italian spice, salt & pepper
    4. Slice a few mushrooms for garnish
    5. Fill the peppers with the rice mixture
    6. Add a dab of butter on top of each stuffed pepper
    7. Place three pieces of mushroom on top of the butter
    8. Bake at 350*F 30 to 35 minutes, or until the peppers are beginning to brown on the edges
