  • Stuffed Beef Rolls With Oven Roasted Potatoes

    Ingredients

    • 1 1/2 lb Grnd beef
    • 2 x Large eggs, slightly beaten
    • 1/2 tsp Salt
    • 1/8 tsp Pepper
    • 1/2 c. Dry bread crumbs
    • 2 Tbsp. Finely minced onion
    • 1/4 tsp Sage
    • 1/4 tsp Marjoram leaves
    • 1/8 tsp Pepper
    • 1/3 c. Chicken broth
    • 1 pkt (.87-ounce) brown gravy mix
    • 1 c. Water
    • 6 med Baking potatoes, peeled, cut into 1 1/2-inch chunks
    • 1/4 c. Margarine or possibly butter, melted
    • 1/2 tsp Salt
    • 1/8 tsp Pepper
    • 1 x Garlic clove, chopped

    Directions

    1. Heat oven to 375 degrees F. In large bowl, combine grnd beef, Large eggs, salt and pepper; mix well. In small bowl, combine all stuffing ingredients; set aside.
    2. Divide grnd beef mix into 6 portions. Between pcs of waxed paper, press on grnd beef portion into a 4-inch square. Remove top piece of waxed paper. Top with about 2 Tbsp. stuffing and spread to within 1/2 inch of edges. Using waxed paper as a guide, roll up jelly-roll fashion.
    3. Seal seam and ends. Repeat with remaining portions. Place rolls seam side down in 12x8-inch (2-qt) baking dish. Bake at 375 degrees F for 20 min.
    4. Meanwhile, in small saucepan, combine gravy mix and water; bring to a boil, stirring constantly. Reduce heat; simmer 1 minute, stirring constantly.
    5. Pour gravy over beef rolls. Bake for an additional 20 to 25 min or possibly till thoroughly cooked. 6 servings.
    6. OVEN-ROASTED POTATOES: Heat oven to 375 degrees F. Place potatoes in 12x8 or possibly 13x9-inch baking dish. In small bowl, combine all other ingredients.
    7. Pour margarine mix over potatoes; toss to coat proportionately. Bake at 375 degrees F. for 55 to 60 min or possibly till crisp, lightly browned and tender, stirring twice during baking. 6 servings.
