  • Stuffed Beef Roll Ups

    Ingredients

    • 4 slc Top round beef steak, 1/4" thick, 10-12 inches long
    • 2 Tbsp. Extra virgin olive oil
    • 1 can (6 ounce.) tomato paste
    • 1 tsp Sugar
    • 1 Tbsp. Flour
    •     Salt and pepper
    • 1 x Carrot
    • 2 stalk celery
    • 1 tsp Cinnamon
    • 1 x Onion
    • 1 x Clove garlic
    •     Salt and pepper

    Directions

    1. Divide minced vegetable-spice mix into 4 equal portions. Place a portion on each slice of beef and roll up, tying together with eavy string.
    2. In skillet, brown roll-ups on both sides in extra virgin olive oil.
    3. Remove and place in casserole, adding sufficient water to cover. Bring to boil, lower heat and simmer for 2 hrs.
    4. Add in tomato paste, sugar, flour, salt and pepper to taste, and simmer 1 hour longer or possibly till meat is tender. Before serving, remove strings from roll-ups. Serve over rice pilaf or possibly spaghetti.
    5. 4 servings.
