Mushroom Stuffed Beef Rolls
Ingredients
- 3 pound round steak, 1/2" thick
- 1 (4 ounce) can mushrooms, liquid removed & minced
- 1/2 c. minced parsley
- 1/2 c. minced onion
- 1 c. grated sharp cheddar cheese
- 1/4 c. flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 3 T butter
- 1 (10 1/2 ounce) can beef consomme, undiluted
- 1/2 teaspoon dry mustard
Directions
- Cut steak into six portions and lb to 1/4" thickness. Put together mushrooms, parsley, onion and cheese and spread approximately 3 tbsp mix over each piece of steak; reserve remainder. Roll steak pcs and fasten with skewers. Coat steak pcs with combined flour, salt and pepper. Heat butter in frying pan over medium heat; add in steak rolls and brown. Pour off fat. Stir in consomme, mustard and remaining mushroom mix and heat. Cover and bake in 350 degree oven for 1 1/2 hrs or possibly till meat is tender. Makes 6 servings.
