  • Strawberry Swirl

When I was in junior high, my Home Ec teacher taught us this recipe...and I love it still! I have to say, it's by far the best thing I learned that semester. My parents loved it, too, and frequently requested this dessert. It tastes like a combination between cheesecake and ice cream pie. My tastebuds are screaming right now for Strawberry Swirl!

    Ingredients

    • 3/4 C Graham Cracker crumbs
    • 3 Tbsp butter (melted)
    • 2 Tbsp sugar
    • 1 C sugar
    • 1/8 tsp salt
    • 3 eggs (separated)
    • 1 8oz pkg cream cheese
    • 1 10oz pkg partially thawed strawberries
    • 1 pkg Dream Whip (whipped)

    Directions

    1. Combine thoroughly crumbs, melted butter and 2 Tbsp sugar.
    2. Lightly press mixture into well-greased 8x12 pan. Bake at 350 degrees Fahrenheit about 8 minutes. Cool thoroughly.
    3. Beat egg yolks until thick. Add cream cheese, sugar and salt; beat until smooth and light.
    4. Beat egg whites until stiff peaks form. Thoroughly fold whipped Dream Whip and egg whites into cheese mixture.
    5. In a mixer or blender, crush strawberries to a pulp.Spoon 1/2 through cheese filling and spread mixture into crust. Spoon remaining puree over top; swirl with a knife.
    6. Place into freezer until frozen. Remove from freezer and let sit about 15-20 minutes before serving.
