Strawberry Oatmeal Bars
Taste Of Home - Flo Burtnett Very festive and pretty on your Christmas Cookie Platter when you use strawberry preserves Ingredients
- 1 1/4 cups flour
- 1 1/4 cups quick-cooking oats
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup butter, melted
- 2 teaspoons vanilla extract
- 1 cup strawberry preserves
- 1/2 cup flaked coconut
Directions
- In a bowl, combine the dry ingredients
- Add the butter and vanilla
- Stir until crumbly
- Set aside 1 cup of the mixture
- Press the remaining crumb mixture into an ungreased 13 x 9 inch baking pan
- Spread the preserves over the crust
- Combine the coconut and the reserved crumb mixture
- Sprinkle over the preserves
- Bake at 350 F for 25-30 minutes or until the coconut is lightly browned
- Cool completely
