  • Chocolate Filled Oatmeal Bars

    Ingredients

    • 1 c. diet margarine Fleischmann's Lower Fat margarine
    • 2 c. brown sugar tightly packed
    • 2 lrg Large eggs
    • 2 tsp vanilla
    • 3 c. oatmeal quick cooking
    • 2 1/2 c. flour
    • 1 tsp baking soda
    • 1 tsp salt Morton's Lite Salt
    • 1 Tbsp. diet margarine Fleischmann's Lower Fat margarine
    • 1/2 c. chocolate chips
    • 14 ounce condensed lowfat milk, sweetened nonfat
    • 2 tsp vanilla
    • 1/2 c. coconut
    • 1/2 c. raisins

    Directions

    1. Bars: Beat softened margarine & brown sugar till creamy. Add in Large eggs one at a time then vanilla & stir in. Combine oats, flour, baking soda & salt. Gradually add in oatmeal mix to margarine mix & beat till well blended. Set aside 2 c. of the dough. Press remaining dough into a greased 15 x 10 jelly roll pan.
    2. Filling: Heat margarine. Add in choc. chips & cook on medium till chocolate melts, stirring frequently. Stir in condensed lowfat milk & vanilla till uniform in color. Stir in raisins & coconut.
    3. Spread the filling over the crust in the pan. Scatter small pcs of the remaining dough over filling. Bake at 350F for 25 min or possibly till top is golden. Cold on wire rack & cut into bar.
