Chocolate Chunk Oatmeal Cookies
Ingredients
- 2 1/2 c. Old-fashioned oats
- 2 c. Flour
- 1 tsp Baking pwdr
- 1 tsp Baking soda
- 1/2 tsp Salt
- 1 c. Unsalted butter room temp
- 1 c. Sugar
- 1 c. Packed golden sugar
- 2 x Large eggs
- 1 tsp Vanilla
- 12 ounce Semisweet chocolate Cut into (1/2" chunks)
- 1 1/2 c. Minced pecans
- 4 ounce Lowfat milk chocolate grated
Directions
- Preheat oven to 350 degrees . Butter cookie sheets.
- Finely grind oats in processor. Transfer to large bowl. Add in flour, baking pwdr, baking soda and salt to oats and blend well.
- Using electric mixer, beat butter and both sugars in another large bowl till light and fluffy. Beat in Large eggs and vanilla. Fold in dry ingredients.
- Mix in semisweet chocolate, pecans and lowfat milk chocolate.
- Form cookie dough into 1-1/4-inch balls. Arrange balls on prepared sheets, spacing 2 inches apart.
- Bake till cookies are pale golden brown, about 10 min. Transfer cookies to rack and cold completely. Store cookies in airtight container.
