  • Chocolate Chunk Oatmeal Cookies

    Ingredients

    • 2 1/2 c. Old-fashioned oats
    • 2 c. Flour
    • 1 tsp Baking pwdr
    • 1 tsp Baking soda
    • 1/2 tsp Salt
    • 1 c. Unsalted butter room temp
    • 1 c. Sugar
    • 1 c. Packed golden sugar
    • 2 x Large eggs
    • 1 tsp Vanilla
    • 12 ounce Semisweet chocolate Cut into (1/2" chunks)
    • 1 1/2 c. Minced pecans
    • 4 ounce Lowfat milk chocolate grated

    Directions

    1. Preheat oven to 350 degrees . Butter cookie sheets.
    2. Finely grind oats in processor. Transfer to large bowl. Add in flour, baking pwdr, baking soda and salt to oats and blend well.
    3. Using electric mixer, beat butter and both sugars in another large bowl till light and fluffy. Beat in Large eggs and vanilla. Fold in dry ingredients.
    4. Mix in semisweet chocolate, pecans and lowfat milk chocolate.
    5. Form cookie dough into 1-1/4-inch balls. Arrange balls on prepared sheets, spacing 2 inches apart.
    6. Bake till cookies are pale golden brown, about 10 min. Transfer cookies to rack and cold completely. Store cookies in airtight container.
