My recipe for Baguio Beans Gisado or Stir-Fried French beans is our usual go to vegetable dish, it’s not just easy to prepare but it is also nutritious and delicious, I am sure those who had tried the recipes would agree. While that may be good and quite a popular recipe it is not vegan nor vegetarian friendly, in fact there were several times I got an email if I can give a vegetarian alternative for this dish and this is what we are doing today.
At first, I thought how I would recreate it without meat because it was an essential part of that dish’s flavour but after some trial and error, I think I knocked it off dead on the spot by using mushrooms for flavour and corn for the texture. Stir Fried Green Beans, Corn and Mushrooms Save Print Prep time Cook time Total time Serves: 3 Ingredients300g French beans, sliced into 1-inch pieces 4 pcs large Portobello mushrooms, sliced ½ cup corn kernels 1 medium sized red onion, chopped 4 cloves garlic, minced ¼ cup soy sauce 1 tsp brown sugar freshly ground black pepper oil InstructionsIn a wok add oil and sauté garlic and onion in high heat. Add mushrooms and stir fry for 30 seconds Add French beans and corn and stir fry for 2 minutes.
