Sticky carrots
Ingredients
- 2 bunches baby carrots, peeled
- olive oil
- sea salt & freshly ground pepper
- a good squirt of honey (or 1 heaped tbsp)
- 2 tbsp chopped fresh parsley
Directions
- Preheat oven to 180°C fan forced (200° C normal).
- Toss the carrots in a little oil and seasonings in a large baking tray. Cook in the oven for about 15 mins until reasonably tender, tossing now and again.
- Then toss the carrots with the honey and parsley. Cook for another 5-10 mins until well glazed.
