Sticky carrots

Ingredients

  • 2 bunches baby carrots, peeled
  • olive oil
  • sea salt & freshly ground pepper
  • a good squirt of honey (or 1 heaped tbsp)
  • 2 tbsp chopped fresh parsley

Directions

  1. Preheat oven to 180°C fan forced (200° C normal).
  2. Toss the carrots in a little oil and seasonings in a large baking tray. Cook in the oven for about 15 mins until reasonably tender, tossing now and again.
  3. Then toss the carrots with the honey and parsley. Cook for another 5-10 mins until well glazed.
