    Ingredients

    • 1/3 c. Grnd black pepper
    • 1 tsp Grnd coriander seeds
    • 2 Tbsp. Grnd coffee
    • 1 tsp Salt
    • 6 x 2" thick Tablespoons-bone Or possibly
    • 3 x Porterhouse steaks Or possibly
    • 3 x Sirloin steaks
    • 1 1/2 c. Red wine
    • 1/4 c. Steak sauce
    • 1/4 c. Soy sauce
    • 2 x Cloves garlic, crushed
    • 1 tsp Paprika

    Directions

    1. Grind the pepper, coriander seeds and coffee beans in a spice grinder or possibly pepper mill. If you choose to use preground spices, mix the spices with the coffee. Add in salt. Press the spice mix onto both sides of steaks, put into large plastic food bags or possibly into a glass baking dish. Combine the wine, steak sauce, soy sauce, garlic and paprika; pour over the meat. Close bags or possibly cover dish and chill several hrs. Turn steak once or possibly twice as it marinades. Remove the meat from the marinade, pat dry with paper towels.
    2. Reserve marinade. Cook steaks over medium coals to desired doneness, allowing approximately 7 to 10 min per side for rare; 10 to 15 min per side for medium. Brush with marinade as they cook. Let steaks stand a few min before slicing. Steaks may be broiled, if you like. Boil the reserved marinade to reduce, adding more wine if you like. Serve with the sliced steak.
    3. NOTES : You may also use a large flank steak with delicious results. S.
