    Squid Vodka Tomato Sauce

    Fresh squid flamed with vodka, then cooked in tomato sauce. Simply the best.

    Ingredients

    • Squid 1 pound
    • 1 onion, chopped
    • 1-2 cloves of garlic, chopped or minced
    • Olive oil 1 tbs
    • Vodka 1 oz (more or less, as you like)
    • Chopped tomato, fresh or canned 1 lb.
    • Chicken or seafood soup stock (or water) 7-8 oz
    • 1-2 bay leaves
    • Salt and pepper

    How to clean squid
    1.
    You can use cleaned squid (tube or ring) but if you have a good fish market selling whole, fresh squid in your neighborhood, just take it. No question.
    2.
    Put your forefinger in the squid from the opening.
    3.
    You will find the joint between bone and tube. Take if off with the finger and pull all at once.
    4.
    Bone, ink sack and all others should be pulled out. Make sure there is nothing left in the tube.

    Cut the tube into rings and put them aside.
    6.
    Pulled out legs are edible but the mouth, located just between the legs, is equipped with a sharp, hard beak. This cannot be eaten so cut it off and discard it and innards. You can also cut off the ends of legs if you mind their suckers.
    How to make the sauce
    1.
    Heat oil in a large frying pan and fry onion and garlic over medium heat. Add red pepper for spicy tone.
    2.
    When onion is tender, turn up the heat and add squid.
    3.
    Pour vodka and mix lightly, and flame it! (Only if you are experienced and comfortable to do it. Be safe and do it at your own risk. Rather, be careful not to do it unintentionally.)
    4.
    Add tomato and bay leaves.
    5.
    Add salt and pepper to taste.
    6.
    Serve over your favorite pasta and enjoy!
