  • Squash & Sausage Casserole

    This recipe is from my friend Ginger Hoover. it is easy to make and DELICIOUS! Even my husband who is not a squash person loves it. Thanks Ginger.

    Ingredients

    • 2 packages frozen,cooked & drained squash
    • 1 stick (1/2. Up) butter
    • 1/2 cup chopped onion ( I used more)
    • 1/4 cup finely chopped bell pepper
    • 3/4 cup grated sharp cheddar cheese
    • 1/4 pound bulk (Jimmy Dean) bulk sausage (I used the whole roll)
    • 1/4 cup Parmesan cheese
    • 1 can water chestnut , drained & chopped
    • 1 egg, beaten
    • 1 tsp.sugar
    • 1/2 cup mayonnaise
    • 3 Tab. Progresso Italian bread crumbs
    • 1/8 tsp. oregano
    • 1/4 cup milk
    • Salt & red peppers to taste
    • Bread crumbs for topping

    Directions

    1. Sauté onions and bell peppers in butter
    2. Add to cooked squash,
    3. Add rest of ingredients.
    4. Add seasoning to taste
    5. Stir until well blended.
    6. Place in buttered casserole
    7. Cover with real read crumbes
    8. BAKE: 350 for 30 min
