Squash & Sausage Casserole
This recipe is from my friend Ginger Hoover. it is easy to make and DELICIOUS! Even my husband who is not a squash person loves it. Thanks Ginger. Ingredients
- 2 packages frozen,cooked & drained squash
- 1 stick (1/2. Up) butter
- 1/2 cup chopped onion ( I used more)
- 1/4 cup finely chopped bell pepper
- 3/4 cup grated sharp cheddar cheese
- 1/4 pound bulk (Jimmy Dean) bulk sausage (I used the whole roll)
- 1/4 cup Parmesan cheese
- 1 can water chestnut , drained & chopped
- 1 egg, beaten
- 1 tsp.sugar
- 1/2 cup mayonnaise
- 3 Tab. Progresso Italian bread crumbs
- 1/8 tsp. oregano
- 1/4 cup milk
- Salt & red peppers to taste
- Bread crumbs for topping

Directions
- Sauté onions and bell peppers in butter
- Add to cooked squash,
- Add rest of ingredients.
- Add seasoning to taste
- Stir until well blended.
- Place in buttered casserole
- Cover with real read crumbes
- BAKE: 350 for 30 min
