spinach and salmon quiche

- 4 eggs
- 16 oz low fat cottage cheese- no salt
- 1 cup shredded part- skim milk
- 1/3 cup Parmesan cheese
- 1 teaspoon oregano
- 10 oz spinach - drained well
- 8 oz - salmon
- mushrooms
- peppers
- artichoke
- tomato
Directions
- pre heat oven to 350
- spray pan with cooking spray
- beat eggs in mixing bowl and stir in remaining ingredients
- pour mixture into pan
- bake until golden brown and middle is set
- let sit 10 min before eating
