Spinach and Ricotta Rolls
Our favourite quick and easy freezable snack. All can be chopped instead of processed:) Ingredients
- 4 cups of spinach
- 250g tub of ricotta
- 1 clove garlic (crushed)
- 2 small onions (quartered)
- Flaky pastry approx 4 30cm squares (homemade or bought)
- 1 egg
- 1T cold water
Directions
- Preheat oven to 160c.
- Blend chopped onions and garlic.
- Add spinach and ricotta.
- Blend to preferred consistency.
- Mix the egg yolk with the cold water and set aside for glazing.
- Roll out pastry and cut into 15cm squares.
- Place 1T of spinach mix in the centre.
- Brush the edges of the pastry with the egg mix and roll into shape, pinch sides together.
- Place on lightly floured oven tray.
- Cook in oven for 20mins.
